Serves 2
Two portions of fish about 1/3 lbs each
2-3 tablespoon of maple syrup
2 tablespoon of lemon juice
2 tablespoon of butter
1 tablespoon of dejon mustard
pinch of basil

Put ingredients in a tin foil tray or pie tin on the BBQ max heat and boil the sauce
Add fish. Skinned is better but the skin will fall off anyway, then scrap the fat away.
When fish is almost done put it directly on the grill to brown a little and drizzle sauce from the pan on the fish. Or just serve from the pan.

This is a very easy recipe to follow – almost impossible to go wrong.

For a little different taste reduce the sauce first. Reduce means boil the heck out of it (on the bbq) until the sauce becomes a little thicker and darker, takes about 5 minutes.

This works on all dark meat, trout, salmon, char, tuna, etc
People who don’t usually eat fish will even like it.
