I'm looking for a good pheasant recipe. Any out there?

Best thing to do is cut into strips batter and deep fry (chicken fingers) and dip in your fav sauce or cut into strips and stir fry iti

My wife just roast it like chicken except put your vegetables and potatoes with it on a close roasting pan, seasoned with salt and pepper and roasting it all together.
It keeps the meat moist.

Fan fry strips of meat but searing it first again to keep moisture in. Then after frying, take off the meat and use the fat on the frying fan putting in some cream or milk with salt and pepper to taste, and some paprika if you like paprika.
This will be your sauce.

Have tried Pheasant many way's, here's my fave.
Use the beer can up the but method only you need a smaller can like redbull.
Fill half full will white wine or use a mix with orange.
Use simple dry rub on bird with usual...salt, pepper,rosemary, anything that goes with chicken..
Preheat oven at 400. Put bird in and turn down to 350. 20 minutes a pound.
Comes out perfect everytime..Enjoy...
