Bacon Wrapped King Salmon (for SalmonX)

You will need the following:

- 1 Pound of bacon- King Salmon Fillets - Italian Dressing - Wood or Steel Skewers - Open Pit tangy BBQ Sauce - Olive Oil

-Clean and remove skin from your king salmon fillets
-Cut fillets into 2 inch cubes. Be sure you have removed all bones.
-Marinate cubes in Italian Dressing for a minimum of 1 hr.
-Cut Bacon slices in half.
-Partially cook Bacon slices.
-Wrap marinated fish cubes in the Bacon placing each Bacon wrapped cube on the skewer until skewer is full.
-Heat barbecue to medium/low. Apply olive oil to grill. Place skewers on grill.
-Brush barbecue sauce and turn skewers when Bacon turns golden brown.
-Repeat and eat!

Try this one with a big Mediterranean salad, Rice, and bottle of wine, or in Paul's case PBR. Cool

I did this with half a rainbow yesterday but was cut in 1" strips then wrapped in bacon and used chicken and rib BBQ sauce... even Mrs Highliner ate it(usually only eats fish out of a box) but then again anything is good with bacon Very Happy
