With winter winding down my mind is beginning to wander. Today I was out looking at the garden and the girlfriend's flower beds and trying to figure out how to plant things so I could maximize the space I have available. Funny thing was I was thinking about where to plant sweet corn.

I came in the house and my daughter called. She just recently moved to a new house and wants me to design her yard and plant a garden for her, so I talked about what I was thinking about doing this spring. She mentioned that she just seen something about Cooler Corn, and remembered me doing this, and she wanted clarity on how to do this for when they have BBQ's this summer.

This was something that we did camping, but also when we hosted family events and needed to have the BBQ, Fire Pit, or stove free for other items. If you've never heard about it, here is how it's done.

Take an insulated cooler and wipe it out so it is clean.
Husk several dozen ears of sweet corn (or as much as is needed) and lay them in the cooler.
Boil (by kettle or pot) enough water to cover corn, add 1-2 inches extra water over corn.
Close lid to cooler. If cooler weather, throw a towel or blanket over cooler.
Do not open for 30 minutes. If more than several dozen, leave closed extra 5 mins./per dozen
When rest of dinner is ready to be served, open cooler, and serve corn.
Keep cooler closed after you quickly take out corn needed for first serving of corn, and 2nd serving will still be tasty and not soggy when you open the cooler for round 2.
Rinse and wipe cooler dry when function is over.

I've headed to family reunions and just had the cooler loaded with corn and hot water prior to leaving. When I left the reunion, all I had to tote back was my “one pre-made container.”

Laugh my a... I think I'll leave the girlfriend to pull the corn out of that cooler Paul. By the way she says Thank You. She is looking forward to using it next week. Now as for me, I have already figured out how I can maximize the cooler for holding a worm box, plus a minnow container for my warmer weather fishing trips this summer. LOL
