Just as snobby as crab cakes without the cost.

Take 1 or 2 clean and skinned fillets, put them through the food processor.
Put the fish in a large mixing bowl.
Chop fresh cilantro finely and add to the bowl. Press in 4 cloves of garlic, and 5 tbsp of cream cheese and 2 tbsp sour cream.
Add 2-3 hand fulls of shredded monterey jack cheese. add salt and fresh ground pepper.

Form the mixture into balls or pucks to what ever size you like. Place them on a cookie sheet and wax paper, let stand in the fridge for 1 hr.

Bread the cakes with this mixture:
5 cups fine bread crumbs, 3-4 finely chopped green onions 1 cup flour, paprika, cayenne pepper, salt. Flour the cakes, and egg wash, then place in the bread crumb mixture.(3- 4 times so the cheese does not run)

fry them in a shallow pan with what ever you like. I use sunflower oil.


This is an excellent addition to a steak dinner or on its own. Some people don't even know they are not crab cakes, and some think they are even better!!!
