Mustard Tarragon Glaze ~~ For Rainbows / Salmon |

When I do keep Bows I usually cook them on the BBQ with a cedar plank board. This is the glaze I make to put on the fish as soon as I take it off the heat.
Ingredients are: ( these are all approximate measurements )
Heavy whipping cream ~~ 1 cup
whole grain mustard ~~ 1 tbs
yellow mustard ~~ 1 tsp
Fresh tarragon ( or dried if you really have to ) ~~ 1 tsp dried or 1tbs fresh
Salted butter ~~ 2 tbs
Prep~~ take butter, mustard's, and tarragon and combine in a small bowl.
In a Medium sauce pan heat Heavy cream to a simmer and let it slowly reduce until it starts to thicken.
** Do not let burn or get lumps in it **
Stir constantly
Add mustard/tarragon mixture and stir in... You should end up with a light glaze you can brush or pour on your Salmon/Trout.
Give it a try sometime... It's delicious! I have only heard great things when I have made this.

Say Randy, with bows and other light fish like trout, try switching the cedar plank for a maple or cherry plank (make sure it's untreated). Even with that glaze, you'll find the flavours different and very enjoyable.

Sounds like a plan... I like to try different things and cook for people and get their honest opinion and build on that.
I just have a lot of Cedar boards around, so that's what I use.
The next one I catch is going right for the smoker!
