I've tried different types of batter, but still go back to the eggs and crackers.... my girls have been eating it since they were able and still sitting in their diapers, and if I change something they are the first to notice........

Mad Dog is hooked on my Cajun Beer Batter
1/2 cup flour(plus extra to coat the fillets)
1/2 tsp salt
1 tsp baking powder
1 tsp Cajun seasonings
1/2 cup beer
1 egg
2 tbsp oil
Coat your fillets lightly with flour, set aside
Mix all the dry ingredients and make a well in the center. In a separate bowl, scramble the egg and add the beer and oil. Pour into the well in the center of the dry ingredients, then blend until smooth.
Let stand about 5 minutes or so while your oil heats to 350 degrees and no less.
Dip 2 or three fillets in the batter and fry, don't put in too many at once or your oil temo will drop too fast, make sure it stays at 350 or you'll have greasy fish. Drain on paper towels and keep warm while you prepare the rest. I like to put mine on a rack over a cookie sheet to let the air ciruclate around them while they keep warm, keeps the batter nice and crisp.

I use a product called Beardon Farms Breading. Its cornmeal based and I get it out of the US. Not only on fish but its great for shrimp, catfish, porkchops and chicken. You can add what other seasonings you like also. I use it on my perch filets. chicken deep fried and pork chops. Yummmm! I can feel a heart attack waiting to happen!

This would be another good excuse to get together on a weekend and enjoy some food and a brew or two......... try each others batter..

We have those propane cookers and we can deep fry our fish at any park or back yards so ya why not get together and have a fishy fry???? half of the batters are shake and bake style so it can be pre bagged and made as we go.........
