shakeandbakes fish brine (for smoking)

1 1/2 quarts water
1/4 cup real maple syrup
1/2 cup brown sugar
1/2 cup salt
2 tbsp lemon juice
2 tbsp soya sauce
1 tsp garlic powder
1 tsp onion salt

Mix all ingredients together,stirring well until everything is dissolved.Place fish pieces skin side up in the brine then refrigurate.Discard the brine after use.
Brine the fish for at least 12 hours but 24 is better.
After 12 to 24 hours drain brine, AND rince fish pieces in cold water, pat dry, and allow to sit on paper towel for an hour, fish should be slightly tacky.
You can now put the fish in the smoker. Enjoy

I tried this out on our laker we caught last Friday and its the STUFF .. got a bow and a half swimming in it now for a smoke fest tomorrow night

I am going to smoke a cigarette, cause the Derby's on and apparently I'm not alowed to boat a fish during it!!!!!! Keep Talking Keep Talking Keep Talking Very Happy

Thanks for the offer Trent! I have xlarge plans to deskunk myself if I get out this weekend. ( Bringing dynamite! ). The worst of it is, my Dad and wifes Dad are having a hoot every time we hear fish on over the radio, they sarcastically say oh it's probably in lake Erie, and so on... If it wasn't for them making me laugh so much, I might get upset out there! lol

Any other members have any fish brine recipes and what is your favourite type of wood chips to use? Planning on smoking some rainbow for the first time. Going to try ShakeandBake's but would like to know what wood chips are recommended the most. If all goes well, I'd like to try some other brines.

I just tried this one last week. turned out the best i've ever done. took it off another web site.

Granny GutZ Smoked Fish Recipe
(Family Secret)
In a 5 gallon bucket -
1 Gallon warm water
2 Cups salt (I use morton's table salt)
2 Cups Brown Sugar
4 Tablespoons garlic powder
8 Tablespoons onion powder
2 ounce bottle of mapeline
1 1/2 cups Karo Corn Syrup

Mix it all real good. Add trimmed filets. I like to cut fish to skin (not through) in 1 1/2 - 2 inch strips. (brine gets in better, smokes better). This is enough brine for a 5 rack Big Chief Smoker. Let brine 6 to 12 hours. Dry on paper towels for at least an hour. Brush with honey if you like. Pepper heavily with crushed or cracked Black Pepper. Preheat smoker 1 hour. Smoke fish 6 to 12 hours or until completely done. Smoking time varies depending on wind and weather. On some occaisions I have finished off in the oven at 200 degrees.

I have a brine that I have used for years and have passed on to many people and they seem to like it. In a two gallon pail mixed in about 3/4 of a gallon of water 1/2 cup pickling salt( coarse salt) 1/2 cup brown sugar, two large heaping table spoons minced garlic, two or three cooking onions and a large can of apple juice. Mix until all disolved. Rinse fish prior to brining. Put in brine and then add water to cover fish. Put a plate or something on top to make sure fish are covered in brine.Put in fridge for 24 to 36 hours. remove fish rinse in cold water , pat dry and smoke with hickory chips at 225 for around 6 hours depends on how thick fish is. I wait for fish to start to crack and wait till the liquids start to run clear and they are done. I then brush fish with maple syrup and put back in hot smoker for 20 minutes and then remove. After they cool down a bit I recoat with maple syrup again. I leave the skin on my fish but take off the belly part...its all fat. The only part about smoking fish is everyone wants to give you fish to smoke...LOL.. I gave rabbit my smoker and recipe and he did an awesome job on his trout.

Thanks for the use of the smoker Eric.
Your brine recipe was very simple and worked great.
Allot of people enjoyed the fish I smoked, and I had NO COMPLAINTS!
Hoping to smoke up some more trout fillets I set aside to take up to deer camp this fall.
I know it will go over good while we are sitting around in the evening.
My daughter has already requested that at least 1 fillet will stay at home!
