This is my receipe for perch burgers that a few people have asked about, so I thought I would share it with everyone.

I was getting tired of cooking my perch the same as I usually do. ( Very tasty no matter how you cook them ) lol

You need to start with 2 large bowls... one for dry and the other for wet mix.

These are approx measurements, but you can put as much or as little ingredients as you want.


~~~~ 1st Bowl ~~~~

Perch-- ( No bones of skin ) 1.5 - 2 lbs Boil water and cook your fish until cooked, drain water, and cool. Flakes apart in bowl.
Premium Plus crackers ( Use the original ones... not the wheat or other kinds ) 1/2 a sleeve.

Mix cooked perch when cooled with Crackers ( don't add too much... you can always add more )


~~~~ 2nd Bowl ~~~~ Mix all these together ~

Whole grain Mustard 1tbs
2 eggs ( whole )
Italian seasoning 1 tsp
Spring Mix salad dressing 2 tbs
Fresh Dill, and Chives 2 tbs or each ( chopped fine )
Red Bell pepper ( finely diced ) 1/4 of a pepper ( don't over do it... peppers over power sometimes )

Add your Perch and Crackers to your wet mix..... Cover and let sit in the fridge for about an hour !
This will let the crackers soak up the moisture so they will not fall apart on you when it's time to cook them.


I usually put mine on wax paper to portion them out, and can easily be bagged up and put in the freezer for another day.

To cook all you have to do is pan fry them with extra virgin olive oil on Med heat. Cook to golden brown on each side.

They are great on a bun with lettuce and tartar sauce! ENJOY !!!!

Hi Randy: Tried your recipe for perch burgers and they were absolutly delicious.I'm making another batch to serve to my daughters family this weekend.I'm sure that they will love them.Thanks again Wayne (just4fun}

Now that sounds and looks good. Can't wait to get some fish to try it. Thinking good what to cook those big pickeral in the DR. Maybe work on the with fish I have in the freezer.

I have used a similar recipe and made burgers with Silver Bass. I don't like to eat Silvers and spend my time C&R fishing for them, but last summer I took a neighbour down fishing for them and he wanted to keep them. Well once we got back he then decided he NO longer wanted them. I was not impressed, but also wasn't going to waste the fish so I made burgers and cakes out of them. They weren't too bad at all. Yet, not planning on making anymore Silver burgers. I also vowed to never take my neighbour fishing again.
