Smelt / Perch Fry

Mrs. Fishy can't cook WAD and I just discovered she has never eaten perch or smelt so I plan to cook her some for Sunday. I should have mentioned that I can't cook WAD either. The only way I know how to cook any fish is role them in flower and fry them in butter, does this work for smelt and perch. What do you think.

That works great for smelt, as for the perch, look back in this section and you'll see some great recipies

It will work but try this one!

My Mother In Laws Famous Perch!!
In the spirit of all the fantastic perch action out there, here is my absolute favourite way to eat perch and its so easy.

Ingredients: 1 or more lbs perch fillets, saltine crackers, flour, 2 eggs, splash of milk Cajun spice, butter, canola oil.

1) wash your cleaned fillets in cold water pat dry.
2) melt butter in large skillet and add 50% oil med-high.
3) make egg wash, and flatten crackers in a large plastic bag with a rolling pin, you can add a splash of Cajun spice to the crackers and a little flour.
4) wash the fillets through the egg wash and place in the cracker bag
5) shake 'em baby! repeat if you like.
6) place in the hot butter and oil mix until golden brown.
(if you like use all butter, that is how the recipe got famous its your body!)
7) eat with your favorite side dish, may I suggest potato salad.

**** this recipe really goes good with a cold beer sometimes a few****
