Tried a recipe on the weekend with some beaver kit meat I brought back from up north a few weeks ago.
Deboned the meat and cut into cubes.
Soaked overnight in salt water.
Rinsed off and patted dry.
Dip cubes in seasoned flour (I used salt, pepper and some Mont. stk spice).
Then brown the cubes in a frying pan in bacon grease.
I placed the pieces in a crock pot.
I browned sliced onions and then some sliced mushrooms.
Add this to the crock pot and then cover with mushroom soup from a can.
I heard it was delicious.. but the time I got up to eat, it was all gone!
Cook should have tried some at home first I guess.

sounds good.

I made beaver tail soup once for one of our wild game nights. The broth was great, but the pieces of tail were horrible. Of course I found out after that your not actually supposed to eat the tail, it just adds flavour. It was a bit of a failure, but my Racoon sloppy joes were a hit (even if they were a little on the greasy side).
