Fish Batter Question

Just a quick question regarding fish batter. The last time I cooked walleye, I cooked them by first putting them in a pancake like batter. For some reason, once the fish was removed from the frying pan that most of the batter had fallen off of the fillets. I don't keep many fish, but I was wondering if someone could tell me what I am doing wrong or if they have experienced this before?

try dredging the fish in seasoned flour first and then an egg bath then your batter, thats how I do it and no issues with the batter not sticking

Thanks to both of you for the suggestions. I was pretty sure the oil was hot when I did this last, but maybe not hot enough.

Both good points, and yes, make sure the oil is hot before adding the fish. Test shot with a dab of moist batter. If it hits the top of the oil and floats and browns real quick, the oil is hot. Side note: don't get the oil hot enough it will flame or boil/bubble out when you add fish. Also, don't overload a pan with fillets! Some people get the temp right on the oil then drop a huge amount of fillets in the pan, and the oil temp drops huge, and the batter doesn't stick.

Hey Frog, I was raised on Egg and Cracker Crumbs all my life! Beat an egg and add a small amount of milk to it! I put my crackers in the blender and fine chop them! Put the fish in the egg and then coat them with the crumbs! Let them sit on a plate for a few minutes and then drop them in the oil, which is at 375 degrees and I use a deep fryer! When they start to float and are golden brown, remove them! The batter sticks to them without a problem! Here is a picture of mine all cooked up and ready to eat! Hope this helps you! Does the type of cracker matter? Do you use saltines or Ritz?

Honestly, I use saltines and they are No Brand and I don't have a problem with them and they taste great!

Try using ground up salt and vinegar chips. One secret to good fish batter is to use pastry flour....

OK I'm going to let the cat out of the bag here. Instead of using seasoned flour first , try using corn starch. Let them sit on a rack for a few minutes. Then drench in a simple buttermilk batter. Then into seasoned crumbs, or Panko or chips or whatever coating you want. The cornstarch glues itself to the meat better and allows a crispier finished product. Provided everything else is right, ie temp, oil, mood, beer.

Invest in a thermometer. Keep the oil at 375

I second gps. Another important thing is to thoroughly dry the fillets with paper towel first, and bring them up to room temp so the oil doesnt get cold as fast. Small batches!

I use Drakes batter, only found in the U.S, sold @ Meijers in one pund bags or a small box, Drakes can be used for frying anything, chicken wings are fabulous......
