Stuffed Turkey breast |

Tried this with one of my wild turkey breast... simple recipe.
Butterfly cut one breast open to a reasonable thickness.
Salt and pepper the inside.
Place homemade stuffing or "stuff & such" on top and press down slightly. (leave about 1" from ends so it doesn't press out.
Roll up the breast but do not pack down too tight. Tie the breast shut with strings.
I rubbed with olive oil on outside then season to your taste.
Place in a roasting pan with some broth in the bottom.
I always lay some bacon on top for moisture with lean meats (and for flavour).
cover and cook at 375 for about 1 hour. throw a few potatoes in the oven at the same time.
