Pirate's Sea Food Chowder |
|
When I make this, I make a lot so keep that in mind. It is the one thing that seems to attract the "Out laws"
-Melt a good amount of butter in your big stock pot.
- dice up 2 large white onions and add to the butter and sauteed.
- peel 10 cloves of garlic and dice up very small and add to the pot.
- dice up or chop some baby carrots and add to pot.
- add some chopped cilantro (and bit of hot peppers if you like it spicy)
-once the veggies are sauteed, add in 2 lb of baby new potatoes chopped to what ever size you like with or without skin, also add in 4 cans of baby clams.
-Add 1 gal of table cream and 1/2 gallon of water and bring to a slow rolling boil.
- Add in pieces of your favourite fish (walleye) cut in 1" pieces, about 1 lb.
- There are 2 ways to finish this chowder off I will give you the easiest. First of all add in salt and pepper to taste, you could if you were so inclined add in some chicken stock. Then you need to thicken it to your liking you could make a bashemeil, or just use corn starch which is way easier.
- About 5 min before you are ready to serve your chowder add in 3lbs of peeled and cleaned jumbo shrimp.
There you have it one of my all time favourites! I like it with about 1/2 litre of white wine (Pele Island Pinot Gris cheap! and good!) and some french bread for dipping.
