Okay now that I have your attention, It is a fish pate with a twist. I was at a Toronto wedding not long ago where they had several of them out at $150 a shot.
You will need: 2lbs Walleye, 2lbs perch, 1 large sweet onion, 4 egg whites, white wine, olive oil, rosemary, cilantro, garlic, fine rye bread crumbs (you can force them through a sieve) parsley, 2doz jumbo shrimp, A bundt pan.
Flake your fish and place in food processor and finely chop.
In a sauce pan, saute your diced onions and garlic, let cool and add egg whites, chopped cilantro, rosemary,1/2 cup white wine. Mix in the bread crumbs until mixture is slightly thickened.
Combine everything in a mixing bowl.
Grease a bundt pan and add mixture.
Place Bundt pan in a larger pan 1/2 filled with water and then place everything in a 325 degree oven for 1-1.5hr.
Remove from oven and place the fish from the bundt pan onto a serving dish and chill overnight.
In the morning, place parsley around the base then garnish with the jumbo shrimp. Serve in slices as an appetizer.
