Pirate's Fire Roasted Wine and Cheese Trout |

Ingredients to feed 4:
4 clean lake trout fillets with skin removed. 300g mozzarella, 300g sharp cheddar, and Romano cheese. green onions, red and yellow bell peppers, garlic, 1 tub sour cream, Cedar planks (available a Zerhs and they are cheap) 1 bottle of Pele Island Pinot Gris.
1) Place your trout on a greased baking sheet season with salt and pepper, let stand.
2) Start your BBQ to med. place whole bell peppers on the grill and roast.
3) in a med sauce pan place 2oz of olive oil and 4 diced garlic cloves and 5 diced green onions.
4) shred all cheese and add to the sauce pan over med heat.
5) as soon as the cheese is soft add in half of the sour cream and blend. Add white wine to taste.
6) slice your fire roasted peppers how ever you like.
7) take your planks and rub with olive oil. place your fillets on the planks.
) Place on BBQ
9) after 2 or three min, spread on a coat of the cheese sauce and top with peppers. finish cooking.
*** Serve with rice egg plant and fresh whole grain bread. Enjoy the Pinot Gris***
