Baked Eggs Italian sausage (for Big Dog)

Kids are already asking if I will make this for them at Christmas. Razz

2 pounds potatoes
11/2 pounds Italian sausage casings removed (I prefer hot and spicy)
1 large onion, finely chopped
2 Tablespoons Extra virgin olive oil
Salt and freshly ground pepper
8 Large eggs
Toast and Hot Sauce, for serving

1. Preheat oven to 375º. Boil potatoes until tender, do not over cook. About 20-25 min.
2. Meanwhile, cook Italian sausage in a 12” skillet, breaking up the sausage as you are cooking it, about 8min. I find that it works better if you cut it up a little first.
Add the onion and cook until softened, about 5min. Scrape out the sausage and onion into a bowl and wipe out the skillet.
3. Heat the oil in the skillet. Add the potatoes, season with salt and pepper and cook until golden brown and crispy, about 6min. Stir in the Italian sausage and remove the skillet for the heat.
4. Using a ladle, make 8 indentations in the potato and sausage mixture; crack an egg into each one. Bake the skillet in the oven for about 12 minutes, or until the egg whites are just set.

You can boil the potatoes a day ahead and refrigerate until the next morning.
