Lots of Left overs here at the Pirate Lair...... I took the Virgina ham and julienned it, then I shredded 2lbs of potatoes added diced green and white onions, 100ml of E.V.O.O Rosemary, Thyme, salt and pepper and mixed it all together in a big bowl. I pressed it all into a casserole dish covered it with Colby and Jack cheese and baked it @ 365 for an hour. It is fantastic. What are you doing with your Left Overs???

Leftovers are wrapped and frozen. I made packs with enough for a meal and froze them.
Smaller amounts are cubed for use in omelets, just scramble the eggs, add ham, diced onion, diced peppers and cook. Top them with shredded cheddar cheese, chopped tomatoes and some salsa. Mmmm.
