Puffed and Stuffed Walleye |

Ingredients: 1 Box frozen puff pastry from Zehrs. 4 clean walleye fillets skin removed 1lb of cerimi mushrooms, 2 cups minute rice, chicken stock, 1 stick of butter, spices. white wine.
1) Roll out your puff pastry on parchment paper, butter both sides and place on cookie sheets.
2)place walleye fillets on the pastry and refrigerate (cut fillets to fit pastry).
3) place your mushrooms through the food processor until finely chopped.
4) in a small sauce pan boil your rice and drain add 2 tablespoons of chicken stock and a good splash of white wine. add in your mushrooms and half a stick of butter.
5) spread rice over your fish and fold and seal your pastries.
6) bake at 375 until pastries are golden brown. (15 min +or-)
7) brush with butter and serve.
*** serve with with fire roasted peppers, garlic mashed potatoes, and good white wine... Cheers***
