We keep it very simple, we love the fish.
Pat the fillets dry and roll the fillets in seasoned flour.
Butter in a frying pan and don't overcook.
BUT... I am hungry now after looking at Paul's pictures of cooked fish! YUM.

I also keep it simple. Take a box of Aunt Jemima pan cake mix and dump in a large zip lock bag. Rinse your fish a pat dry. Pre heat canola oil in your favourite frying pan. I think the oil makes a big difference. Drop into the mix a number of fillets and shake the bag until coated. Shake off the excess & into the hot oil. Very simple and no mess. Also no waste, when your all done with your mix seal the bag and toss into your freezer ready for next time fish is on the menu. Fillets come out looking golden brown and taste fantastic.

1cup Aunt Jeremiah corn bread mix, tablespoon of baking powder, tablespoon corn meal, 2 tablespoons cajun seasoning. Little goes a long ways. Put damp fish in a bag with about 3-4 tablespoons of mix per pound of fish, shake vigorously, let stand for 10 minutes. Fry in grease at least 350 and keep it hot. I don't like a thick heavy batter so this puts a thin dusting that covers all. Works for just about any meat or veggy and will stick when baked in the oven as well.

I have used drakes too vary good... same with Andy's also at Meyers

pancake mix and beer mixed up thick. Add and seasoning you like ( I prefer Valleries). You can either sift the fish in flower first or just put them staright into the batter. Fry in Veggi oil until they look like Pauls. For a tartar I mix real mayo with relish finely chopped fresh dill and a dash of mustard and a dash of franks red hot. F&%&! I'm hungry now.

I use the Fry Magic can only get in US. Mix 1/2 Fry Magic & 1/2 fish shake n bake & put in a plastic Ziploc bag to coat the fish. Makes for a great fish batter.
