Ok im using a different batter now for perch or eyes. First off pancake mix with water until slighty watery, then add garlic powder and lemon pepper as well seasalt into batter then add perch fillets or eye chunks into batter and let stand for 6 or 8 hrs and then deep fry for around 6 to 10 min...................YUMMY.

If I gave you my recipe for fillets that I battered 6 to 8 hours earlier it would have to be my recipe for recycled fish fillets… Mine never last more than an hour after they hit the batter

Batter and deep frying good fish can only take away from great eating fish.
Lightly seasoned flour.. maybe dip in milk first... flour... frying pan!
Perch and eyes are great eating flavour as is. LOL

Agreed… I’ve tried other peoples fish with pancake batter but I do the same as you rabbit, sometimes toss some breadcrumbs into the flour mix… The only way I have pancake batter is with butter & Aunt Jemimas syrup on it

I like to use panko at times but not my go to.
Instead of pancake mix start with bread flour. It fries up quite crisoy

Trying to get that well balanced diet with some vegetables! lol
