Spicy Lake Trout |
|
1) dice a large white onion. sauteed in a large skillet or wok with butter.
2) add 1 pound of hot Italian sausage sliced into pieces about 1" thick
3) once browned add 4 15oz cans of diced tomatoes simmer for 12min.(If using fresh tomatoes you'll need to add liquid. Try chicken stock)
4) press in 5 cloves of garlic, dice 2 jalapeno peppers (optional)
5) add a pound or so of lake trout cut into 1' squares.
(add a splash of white wine if you wish)
6) simmer for 5-10 minutes.
7) salt and pepper to taste.
* please note you can use almost any fish, but this dish really lends itself to Lake Trout.
