Pirate's Lake Trout Pin Wheels |

1) take your clean fillet and remove the skin.
2) remove the back strap and slice into 1.5" wide strips
3) save the belly meat for smoking or fish stock.
4) roll the strips into pin wheels. place on cookie sheet with parchment paper.
5) glaze- mix .5 cup Dijon mustard ,.25 cup chardonnay, pinch of lemon and a touch of zest. chop fresh dill into the mix.
6) brush a good amount on the pin wheels.
7) let set for 1 hr in the fridge.
bake for 8-12 mins at 350 until cooked
Try this out if you don't like it I'll catch you a walleye!
